Almonds can be whole, blanched, sliced, slivered, diced, roasted, pasteurized, available in-shell, shelled, pieces and more, and can be custom processed. Available in conventional, transitional and Organic.
Varieties
The flagship ingredient solution, natural almonds are tried, true, and continuing to grow in global appeal with broad access to numerous cultivars and sizes. From there, they can be processed into many forms. Here are some of the some of the varieties available.
The Padre and Butte varieties of almonds are a small, short, wide-shaped nuts that have a wrinkled surface. These almonds are classified as Californian and Mission. They are more plumped and rounded compared to other varieties, and have a wrinkled skin that holds seasoning well. A soft-shell variety, Carmel is often used for blanching and roasting. Because they are easily processed, Carmel types are often substituted for both Nonpareil and Californian. Nonpareil has a medium flat shape, light color and smooth surface that make this variety ideal for snacking. The Fritz variety is classified as Californian and Mission, and is medium and plump in shape with a dark brown colored nut. As a stone-fruit, the Peerless variety of almond produce medium to large sized nuts and is a hard shell almond with a rich flavor. Finally, the Sonora variety is widely cultivated in a Mediterranean climate.

Finally, blanched super fine flour represents the finest granulation almond flour and has a powder-like consistency for the most delicate and discriminating baker, and ideal for macarons, cookies, breads and cakes. Almond oil also comes in a few options. Sweet almond oil is a our single source solution that can be traced back to the growers and imparts exceptional flavor. Natural almond base is made with a patent-pending process that preserves natural oils and results in a low water activity level. Finally, cold-pressed virgin almond oil is certified non-GMO, keto friendly, gluten-free and paleo friendly. It is made in a facility free of soy, dairy, corn, grain, and peanuts with no artificial colors added. Refined almond oil is the fatty oil from the ripe seeds of one or a mixture of two almond varieties by cold expression.
